I have a confession to make: I have an addiction to peanut butter.
When I first tasted these peanut butter granola bites, I felt like I’d died and gone to peanut butter heaven. If you’re not a fan of peanuts, or if you have an allergy, any nut butter will work for this delectable snack. I bet sun butter would work too (if you try it, let me know how it turns out!).
Best of all there is no baking or cooking involved. Freeze these bad boys and take them on the go, or just pop one or two bites to feed your nut butter addiction.
*4 tbsp Peanut butter or nut butter of your choice. I used Teddie’s Super Chunky unsalted natural peanut butter.
*2 tbsp honey
*2 cups granola of your choice – I used Special K low fat granola but I’m a big fan of Kind granola as well.
*Splash of milk or almond milk
*Optional: chocolate chips or rainbow sprinkles would be a great add if you have a sweet tooth; raisins would work too.
1. Mix peanut butter and honey in a large bowl.
2. Slowly spoon granola into the peanut butter mixture, coating the granola evenly as best as possible.
3. Mix in any additional items like chocolate chipsAdd a splash of milk or almond milk. Don’t add too much – just enough to moisten the mixture
4. Form into balls and place on a cookie sheet or wax paperChill or freeze until time to serve.
